How Our Coffee is Made
At Calisto, coffee is not just something we sell. It is something we live every single day. When you open a jar, we want you to know what went into it and why it tastes the way it does. That is why we want to take you behind the scenes, from the hills where our beans grow to the facility where we roast and craft them into the instant coffee that reaches your cup.

From Coorg and Chikmagalur to Pune
Our story starts in the coffee-growing heartlands of India: Coorg and Chikmagalur. These regions are known for producing some of the best Arabica beans in the country. Arabica is smoother, more aromatic, and more refined than the Robusta beans you’ll find in most mass-market coffee. We chose Arabica because we wanted to bring you a cup that is rich and layered, not just bitter and strong.
Once the beans are harvested, they travel to our own facility in Pune. This is where the transformation begins.

Roasting that brings out the best
Roasting is where green beans turn into coffee as we know it. Too light, and the flavor stays weak. Too dark, and it turns harsh. At Calisto we roast in-house so we can control the outcome ourselves. Our profile sits in the sweet spot: bold enough to give you a strong cup, but smooth enough to keep you coming back.
Every batch is monitored, tasted, and refined. That consistency is what makes our coffee reliable jar after jar.

Two ways we make instant
Instant coffee is often treated like a shortcut, but at Calisto we take it seriously. We actually use two different processes in our Pune facility, each serving a purpose.
The first is agglomeration. This is where fine coffee powder is fused into larger, uniform granules. The result is coffee that dissolves quickly and evenly, with a fuller aroma. It is practical and perfect for everyday use.
The second is freeze-drying. This is considered the gold standard for instant coffee. We brew the coffee, freeze it, and then remove the water in a way that preserves the natural oils and delicate flavors of the bean. The result is a cup that comes much closer to freshly brewed café-style coffee.
By offering both styles, we give you a choice between everyday convenience and pure indulgence.

Every jar of Calisto is licensed under FSSAI standards, and our facility follows strict checks for safety and quality. But quality for us is not just a certificate. It is about making sure that what you taste is the best of what we can create. That means constant testing, tasting, and improving until we are satisfied.

Alongside our pure blends, we also craft coffees that push boundaries. Using natural identical, non-alcoholic alcohol-inspired flavors, we bring you coffee with notes of whiskey, vodka, or rum without the alcohol. It is our way of making coffee exciting again, while keeping it safe and accessible for everyone.
